Gotta Pie Shell? Need a Recipe?

Long Distance Pecan Pie

My best "foodie" friend, Susan, brought this recipe north from North Carolina. We improved the recipe by experimenting and improvising when we both lived in London. Susan has since returned to the South. She and her recipes now live in Houston and I miss her everyday.

3 eggs cup melted butter
¾ cup sugar 1 cup light corn syrup
1 tsp. vanilla Unbaked (9 inch) pie crust
¼ cup melted butter
cup pecan halves
¼ cup chocolate chips
whipped cream

Preheat the oven to 350 degrees. Beat the eggs with a wire whisk. Add the sugar and beat well. Stir in the syrup, vanilla, and butter. Put the pecans in the bottom of the pie crust and sprinkle chocolate chips over the pecans. Pour in the syrup mixture. The pecans and chips will rise to the top. Bake for approximately 45 minutes. Serve with a dollop of whipped cream.
